Ingredients

  • 12 Sardines, medium
  • 1 onion, finely chopped
  • 1 tsp Salt
  • Rice flour or semolina
  • Oil for frying
  • 2 tbsp spice paste
Spice Paste:
  • 20 Kashmiri chilies, dry
  • 1 tbsp Cumin seeds
  • 25 Black peppercorns
  • 12 cloves
  • 2 Cinnamon
  • 10 Garlic pods
  • 2 Ginger
  • 1/4 tsp Turmeric powder
  • 2 tsp Tamarind
  • 1/4 tsp Salt
  • 1/4 tsp Sugar
  • 3 tbsp Vinegar

Preparation

  • Grind the spice paste to smooth paste. Use 2 tbsp, and store remaining in cool place
  • Clean the fish by removing head and centre bone
  • Apply salt and marinate for few minutes
  • Stuff the Sardines with spice paste mixed and onions
  • Roll into flour and shallow fry in hot oil
  • Serve hot with grilled onions and lemon
