Kale Mutton (Dry Caramalized Lamb)

Bold peppery caramalized mutton, great as an appetizer or with Indian bread

  • 1/2 tsp Sugar
  • 1/2 tsp Turmeric
  • 1 1/2 cup, Onion finely chopped
  • 1 cup, Tomato finely chopped
  • 1/2 tbsp coriander powder
  • 1 Potato cut into half
  • 1 lb, Halal mutton (lamb), cut into bite size pieces
  • 1 Lime juice
Spice Paste:
  • 10 Red Chilies
  • 1 Ginger, chopped
  • 3 cloves Garlic
  • 2 Tsp Cumin seeds
  • 4 Cradamom
  • 2 tbsp oil


  • Grind the spices to a fine paste and set aside
  • In a pan add sugar and caramelize
  • Add onions and cook till golden brown
  • Add the spice paste and roast the paste till it releases oil
  • Add tomato and saute till dark brown
  • Add coriander powder, Mutton and saute for another 10 minutes
  • After all the moisture has been evaporated, transfer the above to a pressure cooker, add potato and enough water to cover the mutton
  • Add lime juice, salt to taste
  • Seal the cooker and cook till done
  • Serve with Indian flatbread and salad
