Empadinhas (Small Pork Pies)

Empadinhas, empadas, or empanadas are a common ready-to-go lunch items or appetizers. Empadinhas are baked in small round metal moulds, about 5 cm diameter each

  • 2 lbs Pork, ground
  • 4 onions, medium, and minced
  • 1 tbsp Vegitable oil
  • 1 tsp Sugar
  • Salt and Vinegar to taste
Spice Paste:
  • 2 Green chilies
  • 1 Dry red chili
  • 1 Ginger
  • 4 Garlic cloves
  • 1/8 tsp Cummin seeds
  • 1/4 tsp Turmeric
  • 6 Black peppercorns
  • 1 Cinnamon
  • 1 tsp Tamarind
  • 6 cloves
For Pastry:
  • 1/2 lb Flour
  • 1 tsp baking powder
  • 3 Egg yolks, beaten
  • 1 1/2 tsp Sugar
  • 1/4 tsp Salt
  • 1 tbsp Butter


  • Sieve flour along with baking powder. Knead all the pastry ingredients till a soft dough is formed. Do not use water
  • Mix the pork and spice paste together
  • Brown the onion in hot oil, add the meat mixture and stir-fry for 10 minutes
  • Add half a cup of water, sugar. salt and vinegar to taste
  • Cook till meat is done and the preparation is dry
  • Grease pie moulds. Divide the dough into small even-sized balls
  • Using your fingers spread a portion of the dough on each mould. Pack them with a little pork filling and cover the tops with dough (which should be rolled out and cut out according to the top of the mould). Seal firmly and brush each empadinha with beaten egg yolk
  • Preheat the oven to 400 F and bake the pies for 15 minutes or till golden brown
