Curried Drumsticks (Xengo Temperado)

Ingredients

  • 8 Drumsticks, cut into 2
  • 2 tbsp Vegetable oil
  • 1 Onion, large, finely sliced
  • 3/4 tsp Salt
  • 1 tbsp Vinegar
Spice Paste:
  • 2/3 cup Coconut, grated
  • 3 Green chillies
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Turmeric powder
  • 4 Garlic cloves, minced
  • 3/4 Ginger, minced

Preparation

  • Grind spices to a smooth paste with little water
  • Peel off the hard outer fiber of the drumsticks
  • Heat the oil in a pan; saute the onion till soft
  • Add the ground spice paste and saute for 1 minute
  • Add the drumsticks. Stir well
  • Add 1/2 cup water and salt; cook covered on low heat until done
  • Add vinegar and cook for 2 minutes more. Adjust seasoning
  • Serve hot with rice
