Chicken or Lamb Pulao (Arroz Refogado)

  • 1 cup Chicken or Lamb, cooked and shredded
  • 2 cups Rice, long-grained
  • 3 tbsp Vegetable oil
  • 5 Cloves
  • 1 Cinnamon stick
  • 2 Onions, medium, finely sliced
  • 2 tsp Garlic, minced
  • 1 1/2 tsp Ginger, minced
  • 1/2 tsp Turmeric powder
  • 1 Tomato, large, chopped
  • 4 cups Chicken or lamb stock
  • 1 tsp Salt (or to taste)


  • Heat the oil in a pan; add the cloves and cinnamon sticks and saute for 30 seconds
  • Add the onions and fry till soft
  • Add the garlic and ginger; saute for 30 seconds. Add the turmeric powder and tomato; saute till soft and pulpy
  • Add the rice and stir-fry for 1 minute
  • Add the chicken / lamb stock and salt
  • Add the meat and bring the mixture to the boil. Cover the pan, lower heat and simmer for 15 minutes or till the rice is cooked
  • Serve hot with chourico and lamb, chicken or pork curry
