Assado De Porco (Roast Pork)

  • 2 lb Pork roast, do not cut
  • 6 tbsp Oil
  • 2 tbsp ginger-garlic paste
  • 1 tsp Sugar or jaggery
  • 3 tsp salt
  • 2 tbsp Vinegar
  • 1 tsp Cumin powder
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Black peppercorn powder
  • 1/2 tsp clove powder
  • 1/2 tsp Cinnamon powder
  • 1 1/2 tsp Red chilli powder


  • Poke the Pork with the edge of a sharp knife so the marinate penetrates
  • Mix the next marinate and apply to the meat and marinate for 2 hours
  • In a large pan, heat the oil, and add pork and saute on high heat till each side is browned
  • Add 4 cups of water, sugar and cover the pan
  • Cook on slow fire till the meat is tender and a thick sauce is formed
  • Slice the meat and fry in oil in a frying pan
  • Serve with a raw salad
